I presume that the query is about mapping EPP to work over Internet Mail, not specifically or directly over SMTP? That is, I presume that the task is to define appropriate MIME objects and RFC822 -- oops, RFC 2822 -- addresses? That way the EPP requests and responses travel as regular email. If you any other sort of thing in mind, please explain what. And please carefully explain why.
